Studies on diabetes: Cinnamon at various doses decreased mean lasting serum glucose levels 18-29%, triglyceride 23-30% LDL cholesterol 7-27% in middle-aged type II diabetics.
Other uses: Anorexia diarrhea, dyspepsia, flatulence, fever, gastrointestinal spasm, gingivitis, nausea, vomiting, menstrual problems.
Phytochemistry: Cinnamaldehyde; phenols, terpenes, cinnamyl alcohol, tannins, mucilage, procyanidins and coumarins.
Potential adverse effects: Allergic reactions, skin and mucous membrane irritation. No significant medication interactions noted.
Apple Crumble: A guick and easy version that makes a delicious low GI dessert.
3 Granny Smith apples, peeled, cored and sliced ,1/2 teasp mixed spice
Crumble:
-1 cup (90 g)rolled oats, ½ cup unprocessed oat bran, 1/2cup brown sugar, 1 teaspoon cinnamon, 45g poly- or monounsaturated margarine.
Combine the apples and spice and place in a 25 cm pie dish. In a food processor combine the crumble ingredients. Mix to form a crumble and sprinkle over the apples. Bake in a 180 C oven for 30 min.
Cinnamon Muesli Cookies:
2 tblsp canola oil, 3 tblsp golden syrup, 1/3 cup (80ml) orange juice, 1 cup (150 g) unsweetened rolled oat muesli, 1 cup (125 g) self-raising flour, 1 tblsp cinnamon, icing sugar
Heat the oven to 180 C. Line a baking tray with baking paper. Measure the oil and golden syrup into a large mixing bowl. Add the orange juice and mix. Add the muesli, flour and cinnamon and mix to a soft dough. Place spoonfuls of the mixture onto the prepared tray, leaving about 2 cm between each cookie. Bake immediately for 15-20 min, till just golden brown. Cool on a wire rack and sprinkle with a little icing sugar.
